Just to let you know that I installed from sources enscript. 
The debian official package is newer than the 1.6.1, last version of
enscript known to works with viewcvs.

So, I also set apt to held my enscript package. 

And finally, we now have syntax coloration with viewcvs :)

For example
http://savannah.nongnu.org/cgi-bin/viewcvs/savannah/savannah/gnuscripts/sv_sync_www.c?rev=1.1&content-type=text/vnd.viewcvs-markup
