I've gotten past the error where it can't find ks.cfg (had to modify the
initrd.img file on the boot image).

Now, kickstart automatically starts upon booting from the CD ROM.
However, it still keeps prompting what language, what keyboard and where
to install from.

I answer these (just to test everything else), and select "Local CD" for
install source. Kickstart fails saying it's unable to find the "Redhat
installation CDROM". I've duplicated the RH 7.0 install CD layout
(directories), and several of the files (modified the base/comps file to
have a new section of my own with the packages described there, ks.cfg
points to this package to install). Is there a specific file/volume
label kickstart is looking for so it knows this is an installation CD?
