you can`t!

at least there isn`t a "clean" or an "official" way for this.
you could delete that dir/file from the backup-dir and also from the 
increments dir (if there is an increment for this)

BUT:
there is information about that backup' ed data in the metadata files, which 
would still exist and reference files, which don`t exist anymore.

don`t know if this can be really problematic, though.

deleting files from the backup has been requested as a feature several 
times.
