Well, I set up CVS first and SVN later on at work on our debian linux server.

I would like your opinions on this... what do everyone use at work ?

SVN is better, tortoise svn is a really good windows client and can be used without
a dedicated server, if you work an your own.
The main advantage of svn is, that you can rename files and directories (you will
need that sooner or later).
And it is much faster over a slow network link.

Say I find a job in this field, what would my boss be most likely to ask
me to use, CVS or SVN ? Or do the bosses not care, and the engineer can
use and setup whatever system he prefers or is familiar with ?
Well, if a version control system already exists, you will be forced to use it.

If it doesn't and your are lucky (e.g. in a small company), you can setup whatever
you like.

At work we use svn together with scarab as bug-tracker. Look at:

http://scarab.tigris.org/

A good bug tracker is as important as a version control tool.
