Thanks, Richard. I figured it out. I just can't seem to undo (ctrl z) this command, returning to regular (default) note spacing. Any advice?

The way to find things in Denemo is via the View->Command Center
In the search box there if you start to type Proportional Notation
you get as far as Propo
and the search has found

Command: Proportional Note Spacing
Spaces notes in proportion to duration, based on the duration given.
Location: Object Menu ▶ Score ▶ Typesetter ▶ Print Layout
Internal Name: ProportionalNotation

I put in the value 16 with this command and got

\set Score.proportionalNotationDuration = #(ly:make-moment 1/16)

inserted in the LilyPond syntax.
