Perhaps either displaying the task as completed (i.e. X w/ overstrike font)
or, not displaying the task on that page.

That would be fine.  I think a way to hide/unhide in the current 
view via a variable setting would be nice.  I can see where rather 
than switching to a different page to see the number of sub-tasks 
left, I'd want to just M-x planner-toggle-task-tree or something 
like that.

Either is fine with me.  Display is already somewhat different than 
the underlying text page if one considers font.  Leaving the prefix 
there is fine though, since most of the time I would guess these 
sub-tasks would be hidden.
