Hello Dave,

Yes a SoundFont would work fine for this purpose.  Personally I use Swami on Linux, but I suppose I'm a little biased (I'm the author).  Its known to run on OS X and Windows too, with varying amounts of success (mostly success on OS X as far as I know).  Its still in development, but is pretty useful for just adding multiple samples to a new SoundFont and saving it.

There is however a rather significant bug that I'm working to fix which can cause file corruption, when saving over a file.  Simple work around is to just save to a different file name.

Don't hesitate to ask questions on the swami-devel list if you have any.
