Daniel,
for the subfield edit problem, you can check this out, it worked for me change 
line 140 in marc_subfields_structure.pl

explained here:

and you have to use a perl editor of course.

Daniel,
Did you use the windows install package? What version of Koha and what data set 
are you using? Are you using a blank dataset?
