No, remove-empty is set to true by default in a number of contexts, 
including Lyrics.
Also, these default property settings are indeed documented in the 
lilypond internals,
in the documentation of the corresponding context, e.g.
http://lilypond.org/doc/v2.11/Documentation/user/lilypond-internals/Lyrics#Lyrics
The reason that you didn't find them in the grob documentation is that 
the setting
differs from context to context.
