Just insert
\override Timing.SpacingSpanner #'packed-spacing = ##t
to turn it on and
\revert Timing.SpacingSpanner #'packed-spacing
to turn it off again.

Probably not, there hasn't been much work done related to gregorian
chant notation during the last year.
