Take a look at the CHANGELOG (in the root of the CVS checkout).  It
details both bug fixes and new features, for every version of lwIP, and
it should be possible to work out which commits in CVS relate to which
bug fixes.  Once you've got that CVS should be able to supply you with a
diff for that commit.  It's not as easy as having it all on the wiki,
but I think you can get what you want with a little work.
