Why is that ridiculous? Android is an open sourced project. Do you know of any other $200 tablets that compare with the Nexus 7? If you do please let me know.

There are several markets other than Google Play that provide
proprietary apps in case you need them.
I wouldn't call them 3rd party because they are as official to Android
Open Source Project as Google Play is.

Besides installing Firefox through F-Droid, Mozilla is providing a
direct download apk link for Aurora
http://www.mozilla.org/en-US/mobile/aurora/

I haven't installed Google Play to my phone (or any other Google app)
and I can't say I miss much.

I have a cyanogenmod phone without google for 6 months :
I use F-droid as a market.
The main advantage is that you can add other repository.
Thus I have the classical F-droid one plus the guardianproject one
but you may add others one.

For my "evryday wihout google" life I use :
        *K-9 mail (+APG) for my mails
(Apache2)       *Gibberbot for XMPP conversation (it deals OTR and can even
be used in google talks )  (Apache2)    *Firefox as webbrowser
                                     (MPL2)     *duckduck go apps as
search engine                             (Apache2)     *The Diaspora
webclient
(GPLv3) *Jamendo to listen music
       (Apache2)        *KeePassDroid to manage my password
     (GPLv2)    *Offline Calendar as a calendar without synchro  (he is
efficient but ugly :/)              (MIT)       *OsmAnd as maps and GPS
stuff                                  (GPLv3)  *Yaaic as an irc Client
                                                 (GPLv3+)
I don't have problems when browsing except on youtube.... :P

Just a heads-up - there are first signs that Google is killing
OpenDocument Format support in Google Docs:

"Google Docs/Drive doesn't offer preview of ODF files; it doesn't open
ODF files. You will have to first convert it to the Google Docs
format. Google Docs also doesn't offer the export in all ODF formats.

What Works With Google Services?

imho supporting f-droid is most important.
it's a true alternative to google play - visiting webpages and searching
for download links is so 2000 ;)
