I personnally prefer(.ed, I don't work on mac anymore) to stick to command
line and use fltk. If you are happy with gnuplot then you may build without
openGL support.
Anyways, AFAIK GraphicsMagick is used for image manipulation (reading/writing)
not for plotting/printing and I don't know if it is an optionnal dependency.
