Well you can set it, but it isn't remembered...
this is just the bug that Jeremiah was going to fix, except that it
keeps going back to JACK now instead of to Fluidsynth, as I reversed the
order

yes, it could look at the prefs before warning, but the above bug needs
fixing first.
