you could also test/install kartouche, that's a po manager on a web interface : nice when you have many translators.

this program will display the original string (sentence) in one field and you'll have to insert a translation into another field. it is fast and easy. and all you need for that is a .po file (sort of enhanced txt file) with the original text, which you can get from the Koha archive files.
Do you mean these '.po' files or other ones?

        ./koha/misc/translator/default_opac_pl_PL.po
yes and no. You generate .po files with the ./tmpl_process3.pl script. This script parses all the templates and creates the .po file. The sams script with another parameter will create translated templates from the english one and your completed .po file.

How about for the MARC21 or UNIMARC field names?
They are not a part of the application. They are a part of the DB.
so UNIMARC (in french) and MARC21 (in english) are in a .sql file that is added into the DB during install. They are hidden in misc/marc_data and contains the dump of 2 tables marc_tag_structure and marc_subfield_structure.
