Follow-up Comment #4, bug #41067 (project octave):

I think it might be worth knowing specifically which missing dependency caused
the segmentation fault in this case, but I understand if you just want Octave
working and don't want to play around with dependencies anymore :)

The library packages Kai listed are required for the full set of features that
Octave has, but many of them are optional, and Octave should run with reduced
functionality if they are not available and not crash, if that's what was
really going on in your case.
