For what it's worth,
I compile LilyPond on ArchLinux pretty much every other day :
pikaur -S lilypond-git --rebuild
I've change this line (33?) in the PKGBUILD to point to my local repository :
source=(lilypond::git+file:///my/very/own/repo/lilypond-git)
