I use Emacs.app heavily on a daily basis on 10.4 and 10.5 for English and Chinese text editing and program editing/compilation and don't get crashes. However I don't use more complex modes like gud, gnus, and image-viewing. (Though I was using ecb for a while.) I don't know what the problem would be but if it is intermittent all I can suggest is building with no optimization, just -g, to get a better stack trace, and running from gdb (cd emacs/src ; gdb ../nextstep/Emacs.app/ Contents/MacOS/Emacs).
