I've been through this kind of loop myself. What I now use under Linux
(and almost _never_ return to msW;) is:

Mathematica for pretty graphics
Lisp-Stat for more complicated (but B&W) data-visualisation.

Of course, Mathematica isn't free (Lisp-Stat is); however, it turns out
to be very useful in other contexts - eg a good way of generating TeX
for math models. The MMA graphics primitives allow you a lot of
customisation potential.
